Greek Salad
Ingredients:
6 small tomatoes.
1 diced red onion.
1 continental cucumber, skinned, deseesed and diced.
1 red capsicum.
200g black kalamata olives.
250g feta cheese.
fresh oregano (chopped and sprig to garnish).
Dressing:
125ml olive oil.
4tbsp vinegar or lemon juice.
2 cloves fresh crushed garlic.
Method:
Cut the tomatoes in half lengthwise, cut out the core, then cut into 4 wedges.
In a large salad bowl combine tomatoes, cucumber, feta cheese and olives.
Add dressing.
Gently toss ingredients to mix.
Sprinkle the salad with fresh oregano and serve immediately.
Add salt + pepper to taste.
